Sugar-free, gluten-free, dairy-free, vegan, vegetarian chocolate-almond-coconut balls recipe
My husband and I sometimes like sweet stuff (hear, hear) and of course, as a transformational nutrition coach, I can’t possibly have something unhealthy sweet. I walk my talk, hey…(at least most of the time)…and I absolutely LOVE, LOVE to prepare some healthy treats. This weekend I have outdone myself…bashing…and prepared these amazingly healthy and easy to prepare chocolate-almond-coconut balls (sugar-free, gluten-free, dairy-free, vegan/ vegetarian).

Ingredients:
- 1 cup cooked whole millet (alternatively use quinoa or almond flour)
- 8-10 dried de-pitted dates (alternatively use 1 cup of dried fruits such as raisins, apricots, etc.)
- 1/2 cup of virgin organic coconut oil
- 1/2 cup of raw cocoa powder
- Optional: Stevia (if more sweetness is desired)
1 cup of chopped almonds (or mix with/use pecans, walnuts, etc.) - 1 cup designated, grated Coconut
Preparation:
In a food processor blend millet, coconut oil, dates, cocoa powder, and stevia until smooth. You may add a bit more water if too dry but it should still be sticky to form a ball.
Add the nuts and pulse shortly or mix in with a spoon
Form 1 inch sized balls and roll them in the coconut. Place in the fridge and keep your delicious balls in a Tupperware for a few days. I dare you! You can also freeze them and take them out 5 minutes before eating them.
